Directions

  • Cook the rice. Combine the rinsed rice and an equal volume of (1½ cups each) in a pot. Bring to a boil, cover, reduce to low, and cook 15 min. Rest off heat 5 min, then fluff. Leave it in the pot.
  • Mix the marinade. In a large bowl, stir together , bulgogi , , , minced , , , and until smooth.
  • Add the whole to the marinade and toss to coat. Marinate at least 30 minutes in the fridge (or while the cooks). No need to cut them up first.
  • Prep the vegetables. Open the bag of shredded . Cut the into thin half-moons.
  • Cook the chicken. Heat a large skillet or wide pan over medium-high. Add all the marinated in one layer (or as close as your pan allows). Cook until browned and cooked through, flipping once, about 4–6 min per side depending on thickness. Transfer to a plate and rest a few minutes. Slice or chop only if you want smaller pieces for the bowls; otherwise leave them whole or pull apart with tongs.
  • Cook the vegetables in the same pan. Add a drizzle of and . Saute the half-moons until soft at the edges, 3–4 min. Push aside or briefly set aside, then warm the shredded 1–2 min until just tender-crisp. (They can share the pan; keep them in two piles if you want them looking distinct.)
  • (optional but classic). Fry 3 eggs sunny-side up in a little so the yolks stay runny.
  • Bring it together the common way: divide the among three bowls. Add , , and on top (in sections if you like the look, or just piled on). Add an egg to each. Drizzle and , top with and , on the side. Mix everything in the bowl right before eating. That mix-at-the-end step is the whole point of bibimbap.
  • Weeknight shortcut: if you do not care about pretty sections, toss the cooked and vegetables into the pot, fold once or twice, and scoop into bowls with an egg on top. Do not cook the rice, chicken, and raw veg all in one pot from the start; textures suffer. Combining after each is cooked is fine.
