Method

  1. Preheat the oven to 350F (175C) with a rack in the middle position.

  2. In a large bowl, whisk together the , , , , , , , and . Add the meat, , and , then mix with your hands until just combined. Do not overwork the mixture.

  3. Roll into golf ball-sized meatballs and place on an ungreased baking sheet.

  4. Bake for 10 minutes, then flip the meatballs with a metal spatula. Return to the oven for another 10 minutes, until browned and almost cooked through.

  5. Bring the marinara to a simmer in a large skillet and adjust the seasoning. Transfer the browned meatballs to the , leaving the fat behind on the baking sheet. Cover loosely and simmer for 10 minutes, until cooked through.

  6. Meanwhile, bring a large pot of salted to a boil. Cook the until al dente. Reserve 1 cup of the cooking water, then drain.

  7. Toss the pasta with the meatballs and , adding reserved pasta as needed to loosen. Serve topped with fresh and grated .

Variations

  • For more protein, use 2¼ lb meatloaf mix for the meatballs, with 1 cup breadcrumbs and ¾ cup Parmigiano to bind them.
  • For more vegetables, soften an onion, 2 carrots, a zucchini, and 8 oz mushrooms in olive oil, wilt in 5 oz spinach, then pour the marinara in.
