One Pot Chili Mac

Method

  1. Dice the and mince the . Saute in the in a large deep skillet over medium heat until the onions are soft and translucent.

  2. Add the ground and cook, stirring, until cooked through. Drain excess fat if needed.

  3. Stir in the , , , , and . Cook, stirring constantly.

  4. Add the and , stirring well and scraping up any browned bits from the bottom of the skillet.

  5. Add the macaroni and stir. Cover and heat over medium-high until boiling, then stir, reduce heat to medium-low, and cover again.

  6. Simmer, stirring every few minutes with the lid replaced, until the macaroni is tender and the reduces to a rich red gravy.

  7. Stir in half the cheese until melted. Sprinkle the rest on top, cover, turn off the heat, and let residual heat melt the top cheese. Serve hot.

Variations

  • For more protein, use 1½ lb ground beef and add a drained 15 oz can of kidney beans, plus an extra ½ cup of broth.
  • For more vegetables, cook a diced red bell pepper with the onion, then add a cup each of diced zucchini and frozen corn with the broth.
