One Pot Creamy Sun Dried Tomato Pasta

Method

  1. Chop the into small bite-sized pieces.

  2. Add and to a deep skillet or Dutch oven. Saute the garlic over medium heat until fragrant.

  3. Add the , , , pepper, and to the skillet. Break the fettuccine in half if needed so it lays flat and is submerged in the broth.

  4. Cover, turn heat to high, and bring the to a boil. Once boiling, stir the pasta, replace the lid, and reduce heat to low (or the lowest setting that keeps a simmer).

  5. Simmer, stirring every couple of minutes and always replacing the lid, until most of the is absorbed and the pasta is tender.

  6. Keeping heat on low, cut the into chunks and stir into the pasta until melted.

  7. Add the and stir until a smooth sauce forms.

  8. Sprinkle the over the pasta and stir until melted into the sauce.

  9. Serve with additional freshly cracked pepper if desired.

Variations

  • For more protein, season 1 lb of bite-sized chicken breast, brown it in the butter before the garlic, and stir it back in with the cream cheese.
  • For more vegetables, cook 8 oz sliced cremini after the garlic, and stir 3 cups baby spinach in with the Parmesan until wilted.
  • For dairy free, use plant butter, unsweetened oat milk, vegan cream cheese, and vegan parmesan. The cream cheese and pasta starch still carry the body.
