Method

  1. Melt the in a heavy pot over medium heat. Add the and and cook until soft and translucent, about 6–8 min. Stir in the for 30 seconds.

  2. Sprinkle in the and stir 1 min to make a light roux (do not brown).

  3. Whisk in the juice until smooth. Add the , , and . Bring to a simmer.

  4. Simmer gently, uncovered, until the are tender, 12–15 min. Stir now and then so nothing sticks.

  5. Stir in the , , and . Warm through over medium-low heat, about 3–5 min. Do not hard-boil after the dairy goes in.

  6. Remove the . Season with and . Ladle into bowls, top with , and serve with crackers or bread.

Variations

  • For more protein, use a third 6.5 oz can of chopped clams.
  • For dairy free, use plant butter, unsweetened soy milk, and oat barista cream. It comes out lighter, and coconut milk reads sweet against the clams.

Notes

No bacon or salt pork: butter carries the base. Use good clam juice and canned chopped clams for a weeknight pot; organic milk, cream, and butter if you can. For more clam flavor, replace half the milk with extra clam juice. Leftovers keep 2 days refrigerated; reheat gently.
